Midweek lunches and dinners can be quite stressful, so why not try this quick and easy vegan zoodle recipe?
What's more: it's healthy too! Oozing with vitamins and minerals for a nutritious summery meal.
You'll need:
1 small onion
1 garlic clove
pinch of salt and pepper
200g trimmed green beans
40g brazil nuts
1 tablespoon nutritional yeast
2 tablespoons hemp seeds
2 courgettes
Method:
Dice the onion and chop the garlic.
In a small pan, fry the onion and garlic with some salt and pepper.
Once the onions are translucent, add the green beans and cook for another 3 to 5 minutes.
In the meantime, add the brazil nuts, nutritional yeast and hemp seeds to a blender and pulse until crumbly.
Spiralise the courgettes. Arrange on a plate with the green beans and the nut crumble on top.
Serve and enjoy immediately.
