Chickpeas are versatile little fellas, loaded with so much goodness! We just love to oven roast them for a vegan, protein packed snack!
You'll need:
1 can of chickpeas
1 tablespoon olive oil
2 teaspoons of smoked paprika
a pinch of salt
Optional: 1 tablespoon of nutritional yeast - for added B12!
Method:
Pre-heat oven to 200° degree Celsius.
Drain the chickpeas and gently pat them dry with a kitchen towel.
Add the olive oil, smoked paprika and salt. Combine well.
Distribute the chickpeas evenly on a tray lined with baking paper and roast in the oven for 30 to 40 minutes. Stir them half way through.
Enjoy immediately as a snack or keep them in an air-tight container for up to 2 days.
