It's Monday and that alone is reason enough for a treat!
How about a bit of a twist on your 'Apple-A-Day'? Why not this German style baked apple recipe a go!
It makes an indulgent vegan breakfast, filling afternoon snack or scrummy after-dinner dessert.
You'll need:
4 medium sized apples
40g brown sugar
1 teaspoon cinnamon
40g raisins
30g dried cranberries
30g chopped pecans
1 tablespoon vegan margerine
Method:
Pre-heat oven to 200° degree Celsius.
Wash, dry and core the apples. Set aside.
In a bow, mix all other ingredients together.
Stuff the mixture into the cored apples and the margarine on top of each apple.
Add the stuffed apples to a 20 x 20 cm baking pan and add 150ml hot water on the bottom of the pan.
Bake for 30 to 40 minutes.
Enjoy immediately.
