Weekends call for some yummy delights, but now summer is approaching, many of us appreciate a quick and satisfying, vegan to-go snack.
Why not try this health-packed peanut butter and jam smoothie, which isn't only delicious, but also filling and oh so satisfying.
You'll need:
1 medium banana (try frozen!)
30g strawberry jam*
1 pitted medjool date
1 tablespoon unsalted, 100% peanut butter
200ml plant milk of you choice
1/2 tablespoon flax seeds
1/2 tablespoon chia seeds
a handful of spinach leaves
Method:
In combine all ingredients and blend in a high-speed blender.
*Make your own strawberry jam by heating up 2 cups of chopped strawberries (fresh or frozen) in a small saucepan over medium-high heat until the fruit begins to break down and bubble. Stir in 2 tablespoons of chia seeds, remove from heat and let cool for 5 minutes to thicken. Store in the fridge and use within 1 week.
